A vegan take of one of the tastiest sandwiches! This vegan BLT is really easy to make, it will be ready under 15 minutes and even less if you prepare your “coconut bacon” in advance.
You will need any bread you like as a base, lettuce is traditional but I opted for mache, vegan mayonnaise, tomato and coconut bacon.
The bread I’m using here is my from my new favourite bakery in Berlin, called The Bread Station. This type of bread is not that easy to find here, but I just love it – so airy, bubbly and with the perfect chewy texture and crispy crust. It’s the perfect bread for any sandwich.
This delicious, smoky and flavourful sandwich pairs perfectly with some crisps or chips and a green salad.

- 2 cups of unsweetened coconut flakes
- 2 tbsp coconut aminos or tamari
- 1 tbsp maple syrup
- 1 tsp liquid smoke
- 1 tsp smoked paprika
Vegan BLT Sandwich
- 2 slices of bread
- 1/4 cup coconut bacon, 60g
- 1/2 tomato, slices
- 1 small handful of mache
- 2 tbsp vegan mayonnaise (or to taste)
For the Coconut Bacon
Preheat oven to 160° and line a baking sheet with a silicone mat.
Add all the ingredients and toss until the coconut is fully coated.
Bake for about 7 minutes, stir and flip around. Bake for another 5-7 minutes, until crispy and golden brown. Watch out that the flaked don't burn!
Let it cool, it will get even crispier and you're ready to use! Sore leftovers at room temperature for a few days.
For the Vegan BLT
To assemble sandwich, spread vegan mayo on the bread slices. Then top one piece with Coconut Bacon, tomato and mache. Top with other slice and enjoy.
