Vegan Gyros

As promised, here is the second recipe using my Vegan Tzatziki. Ever since I started using jackfruit, I’ve found it more and more simple to create plant based versions of recipes that are usually made with meat like this vegan gyros!

Apart from the meat, this recipe is pretty traditional: lettuce, tomato, cucumber, tzatziki and fries (baked not fried). In the end, I think I managed to make this fast-food recipe healthy and personally we loved it!

Vegan Gyros

Ingredients

For the Jackfruit

  • 1 can of young jackfruit in water
  • 2 tbsp of olive oil
  • 1 small onion, finely dices
  • 1 clove of garlic, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 2 tbsp coconut aminos or tamari
  • 3 tbsp tomato sauce
  • 1-2 tbsp of maple syrup or coconut sugar (optional)
  • salt and pepper, to taste

For Serving

  • 1 small cucumber
  • 1-2 tomato, sliced
  • vegan tzatziki
  • lettuce leaves
  • 1/2 red onion, sliced
  • oven baked fries
  • hot sauce

Instructions

Jackfruit "Meat"*

  1. Drain both jackfruit tins. Cut the firm end of each jackfruit piece and discard. Set aside.

  2. In a medium pan, heat olive oil. Add onion and fry until translucent and lightly caramelised. Add chopped garlic and fry off gently until soft and fragrant.

  3. Add the spices and cook for about two minutes.

  4. Add the tomato sauce and mix well. Then add the jackfruit, mix and let it cook for a few minutes.

Baked Fries

  1. Preheat your oven to 425F. Scrub your Potatoes clean, and peel them if desired.

  2. Chop your fries into any shape of your choice.

  3. Toss your Fries into a large bowl, sprinkle with seasonings of choice (I like paprika)

  4. Place fries onto a baking tray lined with a baking sheet or silicone mat. for 

  5. Bake about 30 minutes or until golden and crispy.

  6. Season with salt.

To serve

  1. Warm up pita breads.

  2. Place pita breads on a flat surface.

  3. Fill with lettuce, tomatoes, cucumber, red onion, jackfruit and baked fries.

  4. Gently fold the pita breads, I like to use paper and tie a string to hold it together. Serve with tzatziki and hot sauce if desired.

Notes

* For better flavour, make this the day ahead or a few hours before.
