Vegan Winter Salad

 

My boyfriend created the Vegan Winter Salad last month when his parents were visiting. We had them over to dinner and made a copious amount of food so we needed something lighter as a side dish. He chose ingredients that are crunchy and fresh: kohlrabi, green apple, carrots and fennel – the perfect foil to the main dish. The tanginess of the apples and lime juice is refreshing and lends some excitement to the earthiness of the root vegetables. And with the matchsticks’ shape of the ingredients you’re sure to get some of everything in every bite.

This Vegan Winter Salad was such a success that we made it several times since then. And the best part is these vegetables are rich in vitamin C which makes it the perfect dish to keep you healthy this winter. It works great as a accompaniment to any dish or by itself as a rejuvenating snack! We made it again today and we’ve been munching on it all afternoon.

Vegan Winter Salad

Prep time: 20 min

Ingredients

  • 1 kohlrabi
  • 1 green apple
  • 1 - 2 carrots
  • 1 small fennel
  • 1/4 pomegranate
  • 1/2 lime, juiced
  • salt and pepper, to taste
  • 1-2 tbsp apple cider vinegar

Instructions

  1. Peel the kohlrabi to remove the waxy outer layer. Cut into fine pieces, then slice into matchsticks form.

  2. Peel the carrot and cut it into the same shape to match the kohlrabi.

  3. Core the apple and cut it into the same shape. 

  4. Cut the white bottom part of the fennel into matchsticks. 

  5. Put all the chopped vegetables in a bowl. Add the pomegranates arils and toss with the lime juice and vinegar. Season with salt and pepper to taste.
