I forgot to mention the best part of this recipe- get ready for a kitchen that smells amazing. My whole apartment had the scent of spices and roasting nuts – simply delicious!
Nut and Coconut Granola
A simple and tasty granola recipe.
- 2 cups rolled oats
- 1 cup almonds
- 1 cup pecans halved
- 1/2 cup coconut flakes
- 1 tbsp chia seeds
- 1/4 cup dried cranberries
- 1 tbsp coconut sugar
- 3 tbsp coconut oil
- 3 tbsp maple syrup or agave syrup
- 1/2 tsp pure vanilla powder
Preheat oven to 180° C.
Add oats, nuts, chia seeds and coconut sugar to a large mixing bowl.
In a small sauce pan, over medium heat, add coconut oil, maple syrup and vanilla extract and mix well.
Pour the mixture over the dry ingredients and mix again.
Spread the mixture evenly onto a baking sheet and bake for 20 minutes.
Add cranberries and coconut flakes, bake for another few minutes.
Once granola is browned and crispy remove from the oven.
Store in an air-tight container and you can keep it for a few weeks!
