Nut and Coconut Granola

Let’s not lie to each other – we all like cereal and granola right? Whoever hasn’t eaten cereal for dinner, raise your hand. No-one? That’s what I thought. I’ve definitely finished entire boxes in 2 days back when I was in high school. Yeah, I know, it’s not something to be proud of, and I wouldn’t do it any more. Just your average store-bought granola is drowning in sugars, oils and fats, everything we’re not supposed to be eating. But guess what? Making your own is super quick and easy and lets YOU have the final say in what goes in!
I wanted to try out a recipe that was simple, naturally sweet and just as tasty as the granola you can find in any store. What I love about granola is how versatile it is – you can eat it so many ways: as a topping in a smoothie or with porridge, with a tasty plant-based milk of your choice, covered in creamy coconut yogurt, or all by itself – it’s just as good!

I forgot to mention the best part of this recipe- get ready for a kitchen that smells amazing. My whole apartment had the scent of spices and roasting nuts – simply delicious!

Nut and Coconut Granola

A simple and tasty granola recipe.

  • 2 cups rolled oats
  • 1 cup almonds
  • 1 cup pecans halved
  • 1/2 cup coconut flakes
  • 1 tbsp chia seeds
  • 1/4 cup dried cranberries
  • 1 tbsp coconut sugar
  • 3 tbsp coconut oil
  • 3 tbsp maple syrup or agave syrup
  • 1/2 tsp pure vanilla powder


  1. Preheat oven to 180° C.

  2. Add oats, nuts, chia seeds and coconut sugar to a large mixing bowl.

  3. In a small sauce pan, over medium heat, add coconut oil, maple syrup and vanilla extract and mix well.

  4. Pour the mixture over the dry ingredients and mix again.

  5. Spread the mixture evenly onto a baking sheet and bake for 20 minutes.

  6. Add cranberries and coconut flakes, bake for another few minutes.

  7. Once granola is browned and crispy remove from the oven.

  8. Store in an air-tight container and you can keep it for a few weeks!
