Cabbage and Carrot Salad With Peanut Dressing

It’s been super hot this week in Berlin, so hot that I’ve nearly lost the will to eat or do anything D: The rage! The horror! What to do for dinner? In times like these a crispy, fresh salad is always the way to go.  This recipe is for anyone who doesn’t have the time or energy to spend cooking on hot summer nights. Quick and easy, this salad gets its crunch from raw white cabbage, paired delightfully with carrots.

For the dressing, I opted for a base of lime juice, ginger and peanuts. Oh yes! The peanuts are the best part of this salad- every time you get one it’s like a mini treasure. I’m not the only peanut fan out there, right?

Cabbage and Carrot Salad with Peanut Dressing

Delicious Summer Salad

Servings: 2 people

  • 1/2 cabbage
  • 2-3 carrots
  • 1 green onion
  • 1 handful peanuts
  • 1 tbsp sesame seeds

For the dressing

  • 1/2 juice of a lime
  • 1 tbsp tamari or soy sauce
  • 1/2 tsp sesame oil
  • 2 tsp smooth peanut butter
  • grated ginger to taste
  • 1 tsp coconut sugar optional


  1. Chop the cabbage into fine strips and use a vegetable peeler to make carrot strips.

  2. Finely chop the green onion.

  3. Add all the salad ingredients to a bowl.

  4. Make the sauce by mixing all the ingredients. Taste and adjust seasonings.

  5. Add sauce to the salad, mix well and it's ready!
